Hello….
I mentioned several ways yesterday on how we can get involved in helping Health Care Reform get passed. This below e-mail was sent to me yesterday. TODAY is the day to make phone calls. TODAY is the day to hook up with friends and neighbors by joining a call party in your neighborhood. I have done these before and they are so much fun. The energy is great when everyone is working toward a common goal. Check out the e-mail below and find a call party that you can join.

With health insurance reform finally ready for consideration before the full Congress, we’ve set a big goal for this Tuesday: 100,000 calls to Congress made or committed to in a single day. We’ll make our voices heard above the din created by the insurance industry’s campaign of misinformation and fear and make sure our representatives know it’s finally time to deliver on health reform.
But here’s the thing — if we’re going to get there, we need your help to reach out to friendly folks who still need to speak up in support of reform.
We’re holding “Time to Deliver” call parties and neighborhood outreach events across the country. We’ll get together in living rooms and community centers, and reach out to supportive voters whose voices are particularly critical in this debate. We’ll talk to them about the President’s plan, and then we’ll ask them to call on their representatives to support reform and thank those already doing so.
And the President will be joining all of the events that evening via an exclusive webcast – please find an event near you and RSVP today.
You don’t need to have any experience to attend a Time to Deliver event. The host will have everything set up for you, so it will just be a great evening of reaching out to voters with your friends and neighbors and making a tremendous difference.
We’ve set a big goal, but if we hit it, two things will happen: we’ll have set a new record for contacting Congress in a single day, and the phones in our representatives’ offices will be ringing off the hook the whole day, meaning our voices cannot be ignored.

Bahameen, Ezzail, Aghigh: Thank you for writing in. I so wish the men would’ve honored their word, but it does not surprise me that they chose not to. Madaline is not the kind of woman who takes lightly to those that don’t stand by their agreements. Those kind of men need to learn that there will be consequences when promises are made and not honored. She has her orders to be discreet, so no, she will not be killing all of the men. I’m sure they will do a fine job killing each other. Let’s hope the Sunnis will honor their agreement should they acquire the position to do so. Be safe.

KAMPO — JAPAN’S MODERN TAKE ON CHINESE MEDICINE
Though practically everyone is familiar with traditional Chinese medicine, far fewer have heard about the traditional Japanese medicine called Kampo. This herb-based system of medicine is in fact based on the Chinese system and it is highly esteemed and gaining popularity here in the West, especially among experts in Eastern medicine. In use for more than 1,400 years, in contemporary Japan Kampo is rigorously researched and tested and now is fully incorporated into their health care system.
Kampo is gaining traction here as well. Memorial Sloan-Kettering Cancer Center has a trial currently in Phase II for a Kampo formula (Sho-saiko-to) for treating hepatitis C patients. In addition, recent research has found another Kampo formulation effective for treating gastrointestinal disorders associated with cancer treatment and surgery. But before I go into the details of all that, let’s look at the unique benefits of Kampo.
KAMPO HISTORY
The Japanese modern approach adapts classical Chinese formulas to Japanese culture. Though for a time Kampo was less popular in Japan than our Western antibiotics and surgical techniques, Kampo has lately experienced a resurgence — and evidence-based research findings and standardization continue to advance it even further. As with our own FDA, in Japan the Ministry of Health, Labor and Welfare approves the formulas for reimbursement under the national health insurance. Seventy-five percent of Japanese doctors currently prescribe Kampo formulas for their patients.
I learned this and more from Dan Wen, MD, president of Honso USA, a major distributor of Japanese herbal formulas in the US. He told me that most of the Kampo formulas use raw herbs, and that the final product must adhere to strict rules for quality and consistency in Japan, standards to which Honso holds products distributed in America as well. Unlike Chinese medicine, which uses literally thousands of herbal combinations, the Kampo system uses fewer than 200 for treatment of most diseases and complaints. In part, this is because limiting the number of products makes it easier to uphold strict standards for research, Dr. Wen told me.
KAMPO AND YOU
According to Dr. Wen, Kampo is meant to be used as a system — unlike the Western model of medicine, which treats specific symptoms in isolation. Kampo practitioners evaluate a patient’s whole current condition to decide what formula or combination is needed.
For instance, for gastrointestinal (GI) complaints, research conducted at Japan’s Keio University School of Medicine confirmed that a formulation called Rikkunshi-to helps reduce symptoms of functional dyspepsia (sour stomach with burping, appetite interference, etc.) as well as the fatigue associated with such GI disorders as ulcers and gastritis. Another formula tested was Hange-shashin-to, which is shown to reduce gastric distress from cancer drugs and is helpful for IBS with constipation, as well as nausea and vomiting from gastritis. Dr. Wen told me that the herbs work by increasing GI motility in general, thereby helping the bowels to function better overall.
The dosage most often prescribed of these formulas is three packets of granules per day stirred into water and taken between meals (though if they cause stomach irritation, Dr. Wen suggests taking them with food). They work quickly and therefore can be used to treat the occasional bout of constipation or other transient problems. Those taking the preparations for chronic conditions, such as IBS, need to continue for two to three months while under the care and monitoring of a health care practitioner, who will adjust dosing as needed.
IS KAMPO SAFE?
Kampo formulations can have powerful effects on individuals, but in the US, they are considered dietary supplements and as such don’t require prescription. To discourage patients from self-treating, which isn’t as likely to be effective, Honso products are distributed only through licensed US practitioners. Here in the US, that’s mainly licensed acupuncturists, Chinese herbal medicine practitioners, naturopathic physicians and osteopaths, and other health care specialists knowledgeable about alternative medicines.
Japan requires that adverse events be reported for Kampo medicines, just as we do with pharmaceuticals here in this country. Thus far, Kampo medicines have been shown to be very safe. However, for those with high blood pressure, Dr. Wen cautions about use of formulas that contain a compound of licorice (glycyrrhizin) such as Hange-shashin-to. He said that the amount of glycyrrhizin in most formulas is under the FDA guidelines of safe level (100 mg per day), but if a person takes other products that contain licorice, that level may be exceeded. Additionally, Sho-saiko-to may be contraindicated for use with certain medications such as interferon — another reason it is important to be treated by a knowledgeable practitioner. If you have trouble locating a practitioner in your area who treats with Kampo, Dr. Wen says to e-mail Honso (info@honso.com) and someone there will be able to give you a local referral.

Senator Cruz Wants Guam Archdiocese To Clean Its Own House
Guam – After a shocking revelation of Sexual abuse at the hands of a Catholic priest Vice-Speaker BJ Cruz and other
Senators met with Archbishop Anthony Apuron and other clergy members in Tumon this morning. The topic of discussion was the highly controversial and divisive same sex civil union debate.
During this mornings closed door meeting the Vice-Speaker says he told the Archbishop to get rid of any pedophile priests he may have on Guam before focussing on keeping same sex civil unions from occuring on the island.
Cruz is a self admitted victim of sexual abuse by the clergy. The Vice-Speaker says his first sexual experience happened when he was 13 years old. He was attending a Salesian run Catholic School when a priest would regualarly wake him in the middle of the night and have sex with him. Cruz says they would then “bathe brush their teeth and then the priest would serve me mass”
Cruz believes sexual abuse by members of the clergy is still happening right here right now on guam. He even references a case brough to his attention a month ago when an individual came to his office to report a complaint of sexual abuse he says he made directly to the Archbishop. According to Cruz this unamed individual’s complaint dealt with a local priest. The complain according to Cruz was never dealt with.
So why bring all of this up now? The vice-speaker says that he decided to go public when the Archbishop began speaking out against homesexuals during his homelies. Despite repeated attempts PNC was unable to get a comment from the Catholic Church.

Here is another case of the greedy white boy selling out the interest of the nation for profit.
Surgical masks used to be made in the USA. Now 94% of them are being made in China and the rest of Asia because of the cheap labor.
The problem is if there is a pandemic, those nations will keep the mask for their own use first. That would mean a huge shortage here in the US.
When will Americans come together to combat the greed of the white boy?

Oh what joy, to be alive in this time, and see these great, lumpen dinosaurs, who wielded way more leverage than they were due, brought low.
The Chamber of Commerce, the AMA, the big Health Insurance companies – perhaps our children and our children’s children will never have to live in a world pockmarked with their abuses.
None of them have stood for the commons, the general good. Just greed, blind self interest and scrambling over bodies to get “what’s mine”.
What would a new world without them be like? One can only dream.

I wanted to make an entry about Accountability. But the blog won’t accept it. So let me say We are holding Shell accountable for their pollution of Guam’s waters.

The Shell oil company in Guam has been fined for violating a US federal environmental law. In July we reported that the US Environmental Protection Agency had ordered the multinational oil company clean up its facility in Guam’s west. A survey of the area uncovered contaminated groundwater, which has the potential to leak into nearby rivers and the ocean.
With the facility due to be sold, the agency raised its concerns that the vital clean-up of hazardous waste may be neglected.

Women of the MMblog, I just want you to add this one thing today, it’ll add an additional 60 seconds and will begin defining that waist. Hold your hands behind your head lightly, elbows out to the sides and held high (like your ta’s!) roll those shoulders back and down, tummy held in, spread your legs shoulder distance apart, and now you’re going to take that left elbow and stretch down your left side trying to touch that elbow to the upper thigh, hold for a count of 5, repeat on the other side, repeat on both sides 10x’s, this is for your oblique muscle, this will shape and tone it, if you are currently doing other things at the gym or on your own with obliques and not liking the results, stop now and do this, I’ll add more later on…other exercises often build this muscle and that’s not what we’re looking to do, we’re going for the sleek waist, stick with me here, the add on exercises will start scuplting you and the walking, well, the walking is getting its ante upped next week, time to kick it up a notch and learn a technique you’ll get into : )
I was chatting with an Asian woman that owns my fave juice bar, thought I’d share my ‘kick the flu’ quick tip, grate 2-3 tablespoons ginger root into a pan, add 2 cups water, bring to a boil, let it sit for 5 min and strain out the ginger, add some agave or honey and drink, voila, that’s it, it’s that easy and simple.

But that’s bc he’s a mind/body/spirit person also and it tends to go that way in convo/print bc it’s all interrelated, every aspect of M/D/S in life and so it’s hard to talk about just one thing at a time, I’ll leave you with this: think good thoughts while eating good food bc eating the good food with a festering thought flowing in your spirit will not nourish you, just as a surely as a burger ingested with a positive mind will not hurt you (once in a while). Watch your thoughts/words carefully, say ‘stop’ ‘delete’ or whatever you need to…
– an example: a friend referred to my daughters’s status (having parenst not together) as ‘that must suck’ and also referred to the old -too bad the fam won’t be an ‘intact’ one- I had to laugh bc contrary to what people may want to label this sitch, it’s all good, no one’s life is ‘sucking’ and that ‘intact’ thing, well – hmm, I know some people who have the intact thing but it ain’t all “disneyland” smiles and happiness, in fact, I’m sure later in life their children may repeat the same deal bc that’s what they’ve seen and the only definition of marital love that was offered up. It’s just an example of using language that does not conjure up anything good/positive, in this case, for me (though not much knocks me off my game) and certianly not for her either, it only served to enforce a limited belief she holds and not to worry, you all know I gave her a new transformational thought to take her down a road less traveled, a nice mellow slightly curvy yet easily maneuvered road…in which she can forgive herself for divorcing, something that was made evident via this convo, not sure she even knew it till that moment.
Interesting info coming from AH/Adam…so Preident Obama’s efforts to make change and diversify the capital are in vain, 2012 is around the corner, what say you? Oh, that was soooo Bill O’Reilly – and he bugs me, hee hee…but this was not good news and I’d like to hear more please.

All year, FOX has worked 24/7 to block President Obama’s agenda—repeating lies about “death panels,” promoting Tea Party protests, and whipping up fake political scandals.1
Now, President Obama is fighting back. The White House communications director said FOX is a “wing of the Republican Party…let’s not pretend they’re a news network.”2 To draw attention to its biased coverage, President Obama will not appear on FOX for the rest of this year.3

Democrats often appear on FOX in hopes of reaching out to conservative viewers. But FOX cuts off their mic, distorts what they say, or runs biased headlines at the bottom of the screen.4 In the end, Democrats always lose on FOX.
FOX insists there’s a difference between its news shows and its right-wing opinion shows with Glenn Beck, Bill O’Reilly, Sean Hannity, and others.
But in August, FOX’s so-called news shows “aired 22 clips of town hall meeting attendees opposed” to Obama’s health care plans and zero in support. CNN and MSNBC were more fair and balanced.5
In another “news” story, FOX passed off a GOP press release as its own research—typo and all.6
FOX executives now describe the channel as “the voice of opposition” to Obama’s agenda. FOX president Roger Ailes—a former adviser to Nixon, Reagan, and George H.W. Bush—said, “I see this as the Alamo.”7
But a Capitol Hill newspaper reports, “In the House and Senate, Democrats who pledged to follow the administration’s near-boycott of Fox were hard to find, although many expressed support for Obama’s stance.”8

Move Over Laws’ Already Apply In 47 States

GUAM – Vehicles are stopped in the middle of the road. What do you do? Slow down and steer clear! It’s the law in all but three states. And if a group of local senators get their way, the Government of Guam could soon jolt meandering motorists into a habit of common sense.
A news release from the Office of Senator Telo Taitague explains the intent behind legislation that would create a Mover Over Law on island (see below). She introduced the bill with Senators Tom Ada and Adolpho Palacios on Friday, October 16th.

News Release
Hagatna, Guam, October 20, 2009 – In an effort to prevent serious injury of accident victims and emergency responders, Senator Telo Taitague along with Senators Tom Ada and Adolpho Palacios introduced Bill No. 262-30. If enacted, this measure will require motorists to slow down, use caution and if practical move to the furthest lane of an accident scene. Enactment of Bill No. 262-30 will create a Move Over Law for Guam. 47 of 50 states have enacted similar legislation.
The provisions of Bill No. 262-30 are based on the National Highway Traffic and Safety Administration’s (NHTSA) recommendations. The bill does not contain any penalties for direct violations. There are, however, stiff penalties if a speeding motorist injures or kills a person attending to accident scene or any of its victims. These new penalties are exacted in addition to penalties in existing law and include (1) license suspension up to five years, (2) an additional $20,000 in fines, and (3) additional imprisonment up to ten years.
Senator Taitague believes that along with the victims, the bill will protect fire and rescue crews, EMTs, police officers and tow truck operators.

I too think the church on guam has too much power. They are holding our people down for the white establishment.
Continue your crusade and you will bring us along eventually. You will wake us up and we will see them for the hypocrites they are.

Lose a Pound a Day and Keep It Off

One of the most effective weight-loss strategies was developed forThe Biggest Loser, the popular NBC reality show. The first 64 contestants — all of whom were obese — lost an average of about 60 pounds each over five months, three times more than most people lose on standard diets.
Admittedly, the participants were in a highly artificial environment. People in real life don’t have full-time trainers, around-the-clock peer pressure and cameras recording their every move.
As an experiment, the producers arranged for 36 people who weren’t on the show to follow a similar program.
Result: The participants lost nearly as much as those who were on the show.
The secret: Less emphasis on calories and more on hard exercise.
Important: To be safe, get a medical checkup before starting any intense exercise program and tell your doctor what you intend to do.
EXERCISE LONG
The Surgeon General advises overweight individuals to lose weight by walking for 10 minutes three times a week, gradually increasing the amount to 150 minutes a week. Unless you’re a racewalker, this level of exercise burns only about 525 calories. It takes nearly a week to lose just one pound.
Better: Prolonged, vigorous exercise. Working out intensely for one hour, twice a day, burns up to 2,500 calories in obese women and 3,000 to 4,000 in obese men. That adds up, on average, to about one pound a day.
Important: The assumption has always been that obese men and women are incapable of long exercise. Not true. Many of our participants were morbidly obese and had been completely sedentary. They struggled at first, but nearly all were able to complete the program.
EXERCISE HARD
It’s the only way to lose appreciable amounts of weight. Suppose that your only exercise is walking. You would have to do it for 5.5 hours a day in order to lose 1% of your body weight in a week. Those who exercise more intensely can get the same results in a day.
The average woman who goes from sedentary to very fit with vigorous exercise gains six to seven pounds of muscle. Each pound of muscle burns at least an extra 30 calories a day.
STAY ON SCHEDULE
People who work out at the same times every day — once in the morning and again in the afternoon or evening — tend to stick with it more reliably than those who “get around to it.”
Also important: Do not quit exercising if you get hurt. Doctors used to tell people to curtail their workouts after injuries. Now we know that injuries heal faster when people keep moving — although you might need to switch to a different exercise. If you hurt your ankle, for example, you might need to swim for a few weeks instead of jog. However, if the pain is worse the next day, even after you changed the exercise, see your doctor.
FUEL UP AFTER WORKOUTS
Muscle cells are more responsive to insulin in the 30 minutes following a workout. People who have a high-protein, high- carbohydrate drink during this period absorb more nutrients into muscle cells and have accelerated muscle growth.
You can use a commercially made muscle-recovery drink, such as Endurox (available online and at health-food stores). Or make your own by blending about a cup of skim milk with fresh or frozen fruit and a high-quality protein powder, such as whey (follow directions on the label).
YOU STILL CAN EAT
The good thing about this plan is that you don’t have to avoid anything. Healthy foods, such as fresh produce, fish and whole grains, are important, but you don’t need to be fanatical.
Even the quantities aren’t that important. The participants in our program lost dramatic amounts of weight, even though they practiced only modest calorie restriction — the women consumed an average of about 1,400 calories a day and the men had about 1,800.
The program works because people who slightly curtail calories and exercise vigorously gain the necessary muscle to burn even more fat. Just as important, eating an almost-normal diet prevents the body from shifting into “starvation mode,” in which it tries to conserve calories — the point at which weight loss slows or stops altogether.

For those of you concerned about my financial compass, I remain committed to the concept that If anyone should have all the money in the world, it should be me.
I feel that if I have it all, I will manage it better than anyone else.
Hence, until the stupid people wake up and take their country back from the likes of me, I will continue to fleece the morons.
Before you get angry with me, look in the mirror. You are the ones electing the republican party who believes in the “free market enterprises.” The people who are content with 1% of the people owning 96% of all the wealth of the country.
Quit bitching about my “greed,” and do something about your stupidity. Most of you allow us to continue without having to pay our fair share of taxes because you think that one day you will be part of our group.
Here’s a fact. You will NEVER be in my economic class. You have allowed us to evade taxes for so long that that event could never happen. I make more money on the interest of my money than some states take in income taxes.
How inane are you people?
You support the party and people who make all this happen while screaming at us who benefit from the actions of those people.
I am not the problem.
You are.
If I die tomorrow, someone else will move in to fill the vacuum. You will still be part of that 96% who own shit in this country.
AH, while I respect your wisdom and financial insight, the fact is you are out of touch with present day reality. The people of America today are so into themselves that they could care less about the health needs of their fellow americans as long as they have health care for themselves and theirs.
The insurance and pharmaceutical industries count on that greed and selfishness to enable them to stay in power. I refuse to align myself with losers. If there is a pot to be split up, I will always be there to demand my share.
My advice to the people – stand for something other than your own aggrandizement.
If you support politicians who support the general welfare of ALL the people, you will get your fair share. If you continue to support the politicians who support only your special interest, you will continue to get people in office who will say anything to get your support and then sell out to the highest bidder,
If that winning bidder turns out to be me, don’t hate me, hate the person responsible for putting a person before me who could be bought, that would be your selfish, self-centered, racist, bigoted asses.

The public has shown overwhelming and sustained interest in hearing from Obama directly. This is the third Obama video to shoot into YouTube’s top three in the past 10 days — past clips of naked celebrities and Scientology rants — and the first video that was shot specifically for web viewers, rather than broadcasting documentary footage of a speech….
The traditional media has been slow to grasp Obama’s YouTube surge. (There has not been a single article in a major newspaper about the new records in the last 10 days.) YouTube politics are largely covered for gaffes (Macaca) and attacks (1984 ad).
But the press is starting to notice the flipside of the Obama Campaign’s communication strategy. It’s the part that affects them. As the Washington Post’s Howard Kurtz reports in a new article:

They were not controlling the media, they were controlling the message. (as has been noted here already)
This way the people could hear what his message was rather than what some reporter or editor chose to take away or editorialize from his speechs To this day a lot of folks still don’t understand the “Guns, religion, and immigrants” statement because of the slanted way it was played in the media.
So I say kudos to the campaign to be way ahead of the game. That was a classic campaign that I’m sure will be studied for many years to come.

It is unfortunate. I don’t know what’s worse, the anchors’ forced concern for the child in this story or the people who want to keep watching and following the train wreck.
It’s not as easy as just turning the channel, since all the local channels were broadcasting it for hours on end. If the parents in this story were trying to call attention to themselves and become reality stars, then they have achieved it! It’s all anyone is talking about anymore.
Yeah, the Heene family wanted to be famous and they knew that by doing something completely outrageous the media would carry them to stardom. But who do you blame; the media or the people who get sucked into following these stories?

Surely you are just blowing smoke? Bush crushed all criticism. When the Republicans were in power, they got reporters fired. Connie Chung and Julian Phillips come to mind.
They even threatened Letterman who made fun of them for a week. They called back and apologized and he made fun of them for another week.
The Obama Administration has made every effort to stay above the fray of Fox and others; however, it’s time to force Fox to at least tell the truth. Obama has made a statement and Fox has quoted him saying exactly the opposite of what he said.
I have witnessed this myself when I have seen the President speak live and then videos of Fox saying he said something totally different. That is dangerous and the White House should put a stop to bald face lying on the President.
What they are doing can not be shielded by Freedom of the Press because that presumes truth and integrity, without malice. That’s not the case with Fox.

Hi,
It’s about time Democrats stood up to FOX! The White House communications director said FOX is a “wing of the Republican Party…let’s not pretend they’re a news network.”
To draw attention to its biased coverage, President Obama will not appear on FOX for the rest of this year.

What to Do With the Superfoods You Don’t Know What to Do With

We know that certain “superfoods,” such as blueberries, spinach and broccoli, are loaded with nutrients. But there may be other delicious superfoods that are as good for you, or even better, that you may not eat because you haven’t heard of them or don’t know how to use them. Here, what to do with the superfoods that you don’t know what to do with…
SEA VEGETABLES
Better known as “seaweed,” sea vegetables are among the most nutrient-rich foods on the planet. Many Americans now are familiar with nori (used to prepare sushi rolls) and wakame (added to miso soup).
There are many other types of sea vegetables, including arame, which is high in iodine, iron and calcium. It helps to lower blood pressure, strengthens bones and teeth, and is beneficial for the thyroid.
Many varieties of sea vegetables are sold in dried sheets, which can be used as wraps or sliced and added to salads, soups and stews.
Arame rice: Toast one-half cup of pine nuts in a dry skillet until evenly browned. Set aside. Soak one-quarter cup of dried arame in water for 10 minutes. Drain, then cover with water and simmer in a small saucepan for 10 minutes. Drain again.
In a large bowl, combine the arame with three cups of cooked brown rice, one cup of cooked wild rice, two green onions (minced), one-half cup of fresh parsley (minced), one-half cup of fresh mint (minced) and one teaspoon of fresh thyme.
In a separate bowl, whisk together three tablespoons of extra-virgin olive oil with two tablespoons of red wine vinegar and one teaspoon of ume plum vinegar. Add the dressing and pine nuts to the arame mixture. Toss well.
QUINOA
Quinoa (pronounced “keen-wah”) has more protein and iron, and fewer carbohydrates, than any other grain. It’s rich in lysine, an amino acid that aids in tissue growth and repair (and helps prevent and treat cold sores from the herpes virus). Quinoa also is rich in magnesium, a mineral that reduces the risk for heart attack and stroke.
Bonus: Quinoa doesn’t contain gluten, so it can be eaten by those who can’t eat wheat or other gluten-containing grains.
Cook quinoa the same as you do rice. Add one cup of quinoa to two cups of water or broth, bring to a boil, then simmer with a cover until all the water is absorbed — about 15 to 20 minutes. It’s more flavorful than white rice, with a light, nutty taste.
Garlic quinoa: Chop half an onion, and add it to the quinoa cooking water. Cook quinoa, covered, until all the water is absorbed. In a small skillet, sauté six cloves of garlic (chopped) in a little olive oil. When the quinoa is done (and the garlic is just crisp), combine the quinoa with the garlic oil and toss well.
PARSLEY
Parsley often is used by traditional healers as a diuretic to reduce water retention. It has a higher vitamin C content than citrus fruits, and it contains oils that can block the effects of some carcinogens, including those produced when grilling meats. The chlorophyll in parsley is a natural breath freshener that is particularly effective at countering the odor of garlic.
Curly leaf parsley has a milder taste than flat leaf. Chefs often keep a bunch of parsley with its stem tips in a jar of water on the counter. They snip it with scissors, which is easier than chopping. Parsley with the stems in water will last about two to three days at room temperature or a few days longer in the fridge.
Tabbouleh: Combine four cups of cooked quinoa with one cup of minced parsley, three green onions (chopped) and one cup of seeded, chopped plum tomatoes. In a small bowl, whisk one minced garlic clove with one-quarter cup of olive oil, the juice of one lemon and sea salt to taste. Add the dressing to the quinoa mixture, and toss well.
CANNED SALMON
Canned salmon is more convenient than cooking fresh fish, and the nutrient content usually is comparable. The oils in salmon and other fatty fish have been shown to lower triglycerides (a type of blood fat), blood pressure and levels of homocysteine, an amino acid in the blood that has been linked to heart disease and stroke.
A fish-rich diet also can relieve the inflammation associated with rheumatoid arthritis and other autoimmune conditions.
Some canned salmon contains pieces of skin as well as bone. They don’t affect the flavor, but some people prefer to remove them. I leave them in because the skin provides extra omega-3s, and the bones are high in calcium.
Salmon salad: Make a salmon salad just as you would a tuna salad, by adding mayonnaise, onion and celery. Or you can toss the salmon with pasta, olive oil (in which you have sautéed some chopped garlic), fresh tomatoes and basil. I also like to add salmon to a green salad for a protein-rich light meal.
KALE
Kale is a slightly bitter, tough, leafy green vegetable that requires cooking. It is high in organosulfur compounds, such as sulforaphane. Studies have shown that these compounds inhibit tumor growth and may prevent colon cancer and other cancers. Kale also is high in calcium.
Sautéed kale: Wash and drain the kale, use a sharp knife to remove the stems, then add the leaves to a half-inch of water in a large skillet. Cover, bring to a simmer and cook until tender, usually six to seven minutes. Drain and rinse with cool water to stop the cooking. Sauté some chopped garlic in olive oil, add the cooked kale and toss.
Or serve kale as a side dish seasoned with a dab of butter and salt and pepper to taste.
